Okay, ladies. Have you seen the new Crystal Light Mocktails? That's right. Crystal Light has Mocktails and they have them in three delicious flavors: Appletini, Margarita, and Mojito. Yah! I can finally have a drink on the job. And like other Crystal Light drinks, these are full of flavor and low in calories. If you haven't tried them, move fast! They're a limited-edition, and will only be sold until Labor Day, September 5, 2011. I've stocked up on them this summer. Mojito is my favorite.

Skinny Girl Margarita
Okay, I'll be honest, even though margaritas are delicious, they're a lot of calories. This week, I thought it would be helpful to introduce you (if you didn't already know) to Bethenny Frankel's, of The Real Housewives of New York, Skinny Girl Margarita.
This mix is a godsend to those of us who love margaritas but love our waist line more.

This mix is a godsend to those of us who love margaritas but love our waist line more.
Ingredients:
2 oz. tequila
Fresh squeezed lime juice from 1 to 2 limes
Splash of orange-flavored liquor (Grand Marnier, Cointreau, or Triple Sec)
Serve over ice with a rim of salt (optional)

Strawberry Margarita Cupcakes
Cake:
3 cups cake flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup unsalted butter, at room temperature
1 cup sugar
1/2 cup margarita mix
2 T lime juice
1 tsp lime zest
5 T strawberry preserves
1/2 cup milk
Preheat oven to 350 degrees. Line 24 muffin cups with paper liners.
Sift together flour, baking powder, baking soda, and salt in a small bowl and set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Add margarita mix, lime juice, lime zest, strawberry preserves and tequila and mix on low speed to incorporate. (Mix may appear slightly curdled at this point but don't worry, it will come back together with the flour.) Add in eggs, one at a time, mixing after each addition. Add 1/3 of the flour mixture, then 1/2 the milk, and repeat mixing after each addition until just incorporated, ending with the flour mixture.
Divide the batter evenly among the cupcake liners and bake approximately 20 minutes until a toothpick inserted in the center comes out clean. Cool approximately 10 minutes and remove from pan to a wire rack to cool completely.
Glaze:
1/2 cup margarita mix
2 T tequila
1/2 cup powdered sugar
Red food coloring
Add powdered sugar to a small bowl, whisk in margarita mix and tequila to make a thick liquid glaze. Add a few drops of red food coloring to desired color. Poke 4-5 holes in each cooled cupcake with a wooden skewer. Spoon glaze over cupcakes, about a tablespoon at a time, giving the glaze a chance to absorb before adding more. You don't want to saturate the cupcakes so you may have some extra glaze left over.
Frosting:

8 oz cream cheese, at room temperature

Hibiscus Margarita
Ingredients
2 shots of chilled Agua de Jamaica (recipe below)
1 shot Tequila Tezón Blanco
1 shot of simple syrup
Juice from 1/2 a lime
Lime wedge for garnish
Pour the Agua de Jamaica, tequila, simple syrup and lime juice into a chilled cocktail shaker filled with ice.
Shake well.
Strain into a chilled margarita glass.
Garnish with a lime wedge.
Hibiscus
2 cups (2 oz) Jamaica flowers
3/4 cup granulated sugar (more if you like it really sweet)
6 cups water
Directions
Bring the water to a boil.
Add the flowers and sugar and stir continuously while the mixture boils for one minute.
Pour into a noncorrosive bowl and steep for 2 hours. *Note- this flower will stain so do not use a bowl that will stain.
Strain the mixture through a sieve, pressing on the flower solids to extract as much liquid as possible.
Taste for strength and sweetness. If it is too potent, add water. If it is too tart, add sugar.
Cover and refrigerate until time to serve.
